4 green bell peppers , cut into thin strips
1 lemon , cut into thin semi-circles

Instructions

1.Preheat the oven to 400°F.
2.Peel and slice the potato and zucchini into thin pieces.
3.In a pan, warm up 3 tablespoons of olive oil over medium-high heat.
4.Add in the sliced potato and zucchini, along with the cinnamon, cumin seed, coriander seed, and garlic powder. Cook for five minutes.
5.In a separate pot, cook the basmati rice according to package instructions.
6.In the pan with the potatoes and zucchini, add in the ground beef, diced onion, minced garlic, chopped parsley, coriander powder, caraway seed, garlic powder, paprika, cayenne pepper, salt, black pepper, and 3 tablespoons of olive oil. Cook until the beef is browned.
7.Stir in the tomato paste and water, then add in the green pepper strips and lemon slices. Cover and simmer for 10 minutes.
8.With a spoon, make four depressions in the stew and crack an egg into each. Place the lid back on and let the eggs poach in the stew for about 5 minutes or until the whites are set.
