Ingredients

4 big ripe tomatoes
4 eggs
2 sweet peppers
2 medium onions , chopped
1 -2 hot green pepper
1 head garlic , all cloves crushed and cut
1 tablespoon tomato concentrate
1 tablespoon harissa
1 tablespoon cumin
bay leaf
thyme , to taste
1 teaspoon salt ( to taste )
1 -4 tablespoon olive oil

Instructions

1.Cut the sweet peppers into small pieces and set aside.
2.Peel and chop the onions into small pieces.
3.Cut the tomatoes into small pieces as well.
4.In a hot, deep skillet, add the olive oil, onions and garlic.
5.Cook until onions are slightly brown.
6.Add sweet peppers and cook for two minutes.
7.Add the tomato concentrate and stir for 30 seconds.
8.Add the cut tomatoes and stir.
9.Add the harissa, salt, cumin, bay leaf and thyme.
10.Stir again and let simmer on medium heat for 10 minutes.
11.With a spoon, make 4 wells in the sauce.
12.Crack an egg into each well.
13.Reduce heat to low and cover skillet with lid.
14.Cook for 5-10 minutes, depending on how you like your eggs.
