Ingredients

1 1/2 lbs carrots , peeled , cut into 1/4-inch-thick rounds
3 tablespoons olive oil
2 1/4 teaspoons ground cumin
1/4 teaspoon cayenne pepper
1/2 cup water
3 tablespoons white wine vinegar
1/3 cup fresh cilantro , chopped ( I like regular parsley )
Tunisian Carrot Salad (Not Mashed) is an easy-to-make, healthy, and flavorful salad that can be served as a side dish with any meal. This Tunisian version of a carrot salad is made with cumin, olive oil, white wine vinegar, and fresh cilantro (or parsley) to give it a unique flavor. Instructions

1.Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat.
2.Add the carrots, cumin, cayenne, and a pinch of salt.
3.Cook for 8-10 minutes, stirring frequently, until the carrots are tender and lightly browned.
4.Add the water and vinegar to the skillet and scrape up any browned bits from the bottom of the pan.
5.Pour the remaining tablespoon of olive oil over the top of the carrots and toss to combine.
6.Remove the skillet from the heat and stir in the cilantro or parsley.
7.Taste and adjust seasoning as necessary.
8.Serve warm or chilled.
