2 cups yukon gold potatoes , 1-inch cubed or 12 ounces yukon gold potatoes
2 teaspoons extra virgin olive oil
1/2 teaspoon ground turmeric
1/4 teaspoon kosher salt
1/8 teaspoon ground red pepper ( optional )
1/4 cup chopped fresh parsley
1/3 cup thinly sliced green onion
4 sheets frozen phyllo dough , thawed
cooking spray
4 large eggs , chilled
1/2 cup feta cheese , crumbled
1/4 teaspoon black pepper
1 large egg white
1 teaspoon water
1/4 cup chopped fresh cilantro or 1/4 cup fresh parsley
Brik is a traditional Tunisian dish that is typically deep-fried. This recipe takes a healthier approach by using phyllo dough and baking rather than frying. Brik-Style Eggs are a popular breakfast dish in North Africa, enjoyed with a cup of mint tea or freshly squeezed orange juice. Instructions

1.Preheat oven to 400°F (200°C).
2.In a small bowl, combine caraway seed, cumin seed, and ancho chili pepper.
3.In a food processor, combine roasted red pepper, water, sugar, and garlic. Process until smooth.
4.In a medium bowl, toss potatoes with olive oil, turmeric, kosher salt, and ground red pepper (if using).
5.Add spice mixture from step 2 to the potatoes and stir to combine.
6.Spread potatoes on a baking sheet and bake for 15 minutes. Stir potatoes, then bake for another 15 minutes, or until tender and lightly browned.
7.In a small bowl, whisk together egg white and water to make an egg wash.
8.Place one sheet of phyllo dough on a clean work surface. Brush lightly with egg wash, then top with another sheet of phyllo. Repeat with remaining sheets of phyllo, brushing each layer with egg wash.
9.Cut phyllo dough into 4 equal squares.
10.Spray 4 ramekins with cooking spray. Place one square of phyllo in each ramekin, pressing down gently to fit the dish.
11.Divide roasted potatoes, feta cheese, parsley, and green onion evenly among the 4 ramekins.
12.Crack one egg into the center of each ramekin. Sprinkle with black pepper.
13.Fold phyllo dough over the eggs, spraying with cooking spray as needed to help it stick.
14.Bake for 20-25 minutes, or until phyllo is golden brown and eggs are cooked to your liking.
15.Serve hot, garnished with cilantro or additional parsley if desired.
