250 g frozen spinach , thawed & drained
425 g tuna , drained
1 small onion , finely chopped
2 tablespoons mayonnaise
black pepper
3 sheets shortcrust pastry , thawed
beaten egg , for glaze

Instructions

1.Preheat the oven to 200°C.
2.In a medium bowl, combine the spinach, tuna, onion, and mayonnaise. Season with black pepper to taste.
3.On a lightly floured surface, roll out each pastry sheet to a 20cm square. Cut each pastry sheet into four 10cm squares.
4.Divide the tuna mixture among the pastry squares, placing the mixture in the centre of each square. Brush the edges of the pastry with the beaten egg.
5.Fold the pastry over the filling to form a triangle. Press the edges together to seal. Brush the tops of the pastry with the remaining egg.
6.Place the pastry triangles on a lightly greased baking sheet and bake for 15-20 minutes, or until golden-brown.
