185 g tuna ( in oil )
1 medium onion , very finely chopped
2 boiled eggs
3 tablespoons tomato paste
salt and pepper
1 packet premade puff pastry
1 beaten egg ( for egg wash )

Instructions

1.Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
2.Lightly grease a skillet with cooking spray and heat it over medium-high heat.
3.Add chopped onion and cook until golden brown (about 5-7 minutes).
4.Add tuna (drained) to the skillet, stir in tomato paste, add crumbled boiled eggs, and season with salt and pepper.
5.Cook for 5-7 minutes, stirring occasionally, then remove from heat.
6.Roll out puff pastry on a floured surface and use a cookie cutter (about 3 inches/7 cm) to cut out circles.
7.Place a spoonful of the tuna mixture on each circle and seal edges of the dough by crimping with a fork.
8.Transfer empanadas onto the lined baking sheet and brush with beaten egg.
9.Bake empanadas for 15-18 minutes until the pastry turns golden brown and puffy.
