Ingredients

1/2 cup water chestnut
1/4 cup water
1/2 cup tapioca flour
1/3 cup sugar
5 drops red food coloring
1/3 cup coconut milk
Tub-Tim Grob is a sweet and popular Thai dessert that is often served at festive occasions such as weddings and religious ceremonies. The name Tub-Tim Grob means 'crispy rubies in syrup', referring to the small cubes of water chestnut that resemble precious stones in the red syrup. This dessert is a blend of different textures and flavors: the crunchy and juicy chestnut cubes, the smooth and creamy coconut milk, and the sweet and fragrant syrup. It is a perfect ending to a spicy Thai meal or a refreshing snack on a hot summer day. In this recipe, we use natural red food coloring derived from beet juice instead of synthetic ones to create a vibrant red hue without any artificial additives.

Instructions

1.Peel and dice the water chestnuts into small cubes.
2.In a pot, bring the water to boil. Add the diced water chestnut and cook for 3-5 minutes or until they are tender. Remove from heat.
3.Strain the chestnuts and reserve the hot syrup. Add enough cold water to the syrup to make 1 cup.
4.In a bowl, add tapioca flour, sugar, and red food coloring. Mix well.
5.Gradually pour 1/4 cup of the hot syrup over the flour mixture while stirring constantly to prevent lumps. Then add the diced chestnuts and stir to combine.
6.In a pot, bring the remaining syrup and coconut milk to a boil. Reduce heat to medium.
7.Using small spoons or a piping bag, drop the chestnut mixture into the boiling syrup-coconut mixture. Cook for 2-3 minutes until they are cooked and float to the surface.
8.Remove the dessert from heat and let it cool down. Serve chilled or at room temperature.
