Ingredients

4 cups canned chicken broth
2 cups water
1 white onion
1/2 carrot , coarsely chopped ( about 1/4 cup )
1/2 celery , coarsely chopped ( about 1/4 cup )
1/2 teaspoon salt
1 cup vegetable oil
1 cup milk
1 cup all-purpose flour
6 medium mushrooms , thinly sliced
4 green onions , diced ( green part only )
Benihana's Japanese Onion Soup is a classic dish that has been served in their restaurants for many years. This TSR version by Todd Wilbur allows you to recreate the same restaurant-quality soup in the comfort of your own home. The soup is made by simmering chicken broth with onions, celery, and carrots, and then topping it with fried mushrooms and green onions. It is a simple but delicious soup that is perfect as a starter or as a light meal.

Instructions

1.In a large pot, combine the chicken broth, water, onion, carrot, celery, and salt.
2.Bring the mixture to a boil over high heat, then reduce the heat to low and simmer for 1 hour.
3.While the soup is simmering, heat the vegetable oil in a large skillet over medium heat.
4.In a medium bowl, whisk together the flour and milk until smooth.
5.Dip the sliced mushrooms and green onions into the batter and then add them to the hot oil in the skillet. Cook until golden brown, about 2-3 minutes.
6.Remove the cooked vegetables from the oil with a slotted spoon and place them on a paper towel-lined plate to drain.
7.When the soup is done simmering, strain out the vegetables and discard them.
8.To serve, divide the soup into bowls and top with the cooked mushrooms and green onions.
