Instructions

.Preheat your oven to 375°F and cook lobster tails according to package instructions. Once cooked, remove the meat from the shells and cut it into bite-sized pieces. Set aside.
.In a separate pot, heat the chicken broth. Keep it on low heat, but make sure it stays warm.
.In a large pot, heat the truffle oil over medium heat. Once the oil is hot, add the chopped carrot and shallot. Cook for about 4 minutes, or until the vegetables are soft.
.Add the arborio rice to the pot and stir it until it is coated with the oil. Cook for 2 minutes.
.Add the brandy to the pot and stir for 1 minute. Make sure the brandy is fully absorbed before moving on.
.Stir in the warm chicken broth, 1/2 cup at a time, until the liquid is absorbed. Continue adding the broth and stirring until the rice is tender and creamy.
.Once the rice is cooked, stir in the heavy cream and cooked lobster pieces. Be gentle so you don’t break up the lobster too much. Cook for 1-2 minutes to heat the lobster through.
.Serve hot, garnished with fresh chives.
