1 whole trout , cleaned
2 tablespoons margarine , divided
1 tablespoon all-purpose flour
salt and pepper to taste
4 ounces fiddleheads , chopped
1 teaspoon dried tarragon
1 tablespoon lemon juice
1/4 cup dry white wine
1/2 cup dry bread crumbs
1 beaten egg

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Grease a 9x13 inch baking dish.
3.In a small bowl, combine 1 tablespoon margarine, flour, salt, and pepper. Mix well.
4.Rub the inside and outside of the trout with the margarine mixture.
5.Arrange the trout in the prepared baking dish.
6.In a skillet over medium heat, cook the fiddleheads in the remaining 1 tablespoon of margarine until tender.
7.Sprinkle the tarragon over the fiddleheads and add the lemon juice and wine. Cook for 2 minutes.
8.Spoon the fiddlehead mixture over the trout.
9.Whisk together the bread crumbs and egg. Press the mixture on top of the fiddlehead mixture.
10.Bake for 20 minutes or until the fish flakes easily with a fork.
