Ingredients

1 lb trout fillet , thinly sliced
1 -2 teaspoon sugar
1 -2 teaspoon salt
3 tablespoons finely chopped dill

Instructions

1.Pat dry the trout fillets on both sides.
2.Mix sugar and salt together, then sprinkle the mixture over the trout fillets.

5.Keep the covered container in the refrigerator for at least 12 hours - but not longer than 24 hours.
6.The next day, remove the container from the fridge and rinse the fillets with cold water to remove the curing mixture.

8.Serve chilled with your choice of sauce and garnish.
