Ingredients

1 slice bacon
100 g silver beet
100 g pineapple chunks
4 rambutans
100 g mozzarella cheese , finely diced
100 g phyllo pastry
2 teaspoons olive oil

Instructions

1.Preheat the oven to 180°C (360°F) fan-forced.

3.In the same pan, add the silver beet and sauté it in the bacon fat for a few minutes.
4.Cut the rambutans in half, remove the seeds, and chop them into small pieces.
5.In a large bowl, mix the sautéed silver beet, pineapple chunks, rambutans, and finely diced mozzarella cheese together.
6.Lay out the phyllo pastry sheets on a flat, clean surface.
7.Brush each sheet with olive oil and stack them on top of one another, then cut them into 8 squares.
8.Place a spoonful of the tropical mixture in the center of each square.
9.Fold the edges of the phyllo pastry up to enclose the filling and form a little pouch.
10.Place the phyllo pouches onto a lightly greased baking tray and bake for 10-12 minutes, or until golden brown and crispy.
