1 1/2 cups yellow onions , diced 1/4 inch
1/2 lb linguica sausage or 1/2 lb smoked sausage
4 tablespoons olive oil
1 cup red pepper , diced 1/4 inch
1 teaspoon fresh thyme leave
1/2 fresh pineapple , diced 1/2 inch
1/2 teaspoon turmeric
1 mango , diced 1/2 inch
1 teaspoon kosher salt
1 papaya , diced 1/2 inch
1 cup arborio rice or 1 cup paella rice
1 star fruit , sliced 1/4 inch
2 1/2 cups chicken stock or 2 1/2 cups vegetable stock
2 tablespoons rum ( optional )
1 tablespoon minced garlic
2 1/2 lbs prawns

Instructions

1.In a large paella pan, heat olive oil over medium-high heat.
2.Add the onions and sausage to the pan, cooking until the sausage is browned.

4.Add the pineapple, mango, papaya, rice, star fruit and chicken or vegetable stock to the pan.
5.Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 18 - 20 minutes or until the rice is cooked and most of the liquid is absorbed.
6.Stir in the shrimp, garlic, and rum (if desired) and cook for an additional 2 - 4 minutes or until the shrimp is fully cooked through.
