Instructions

1.Preheat oven to 350 degrees F.
2.In a medium-sized mixing bowl, whisk together flour and cocoa until combined.
3.In a separate large mixing bowl, beat egg whites, cream of tartar, and salt until stiff peaks form.
4.Gradually add in 1/3 cup of sweetener and vanilla, beating until mixture is glossy and peaks hold their shape.
5.Sift flour mixture over egg white mixture and fold until just combined.
6.Pour batter into a greased 9x13 inch baking dish and smooth out the surface.
7.Bake for approximately 15-20 minutes or until a toothpick inserted in the center comes out clean.
8.While cake is cooling, prepare chocolate icing. In a medium-sized mixing bowl, whisk together powdered sugar and cocoa until well combined.
9.In a separate large mixing bowl, beat butter until creamy and smooth. Gradually add in powdered sugar mixture and 1/4 teaspoon vanilla, beating until well combined.
10.Assemble petit fours by cutting cake into small bite-sized squares. Cover each square in icing and place on a wire rack to set.
11.Melt bittersweet chocolate, butter, and corn syrup in a double boiler or microwave. Stir until smooth.
12.Dip petit fours in chocolate mixture, allowing excess to drip off. Top each petit four with a white chocolate chip before the chocolate sets.
13.Allow chocolate to set for about 30 minutes before serving.
