Ingredients

1 1/2 cups self-raising flour
1 cup firmly packed dark brown sugar
250 g dark chocolate , chopped
125 g butter
1/4 cup cocoa
300 ml sour cream
2 eggs
2 teaspoons vanilla essence
2 packages rolos chocolate-covered caramel candies or 2 packages other chocolate-covered caramel candies
1/4 cup sifted cocoa
These triple chocolate muffins are a chocoholic's dream come true. Instructions

1.Preheat the oven to 180°C (160°C fan-forced) and line a muffin tin with paper cases.
2.Sift self-raising flour, sugar and cocoa into a large bowl.
3.Melt chocolate and butter in a heat-proof bowl, over a saucepan of simmering water. Stir constantly until smooth, remove from heat and set aside to cool.
4.Whisk sour cream, eggs and vanilla essence in a jug. Add egg mixture to cooled chocolate mixture and whisk to combine.
5.Add the chocolate mixture to flour mixture and fold together until a smooth batter forms
6.Pour batter into muffin cases. Press a Rolo into each muffin, ensuring it's completely buried in batter. Bake for 20-25 minutes or until cooked when tested
7.Allow muffins to cool in pan for 5 minutes before transferring them onto a wire rack.
8.Dust with sifted cocoa before serving.
