Ingredients

1/3 cup warm water
1/4 teaspoon sugar
1 teaspoon active dry yeast
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/2 teaspoon ground black pepper
1 cups dried garbanzo beans , soaked overnight in 6 cups of water or can chickpeas
1 tablespoon vegetable oil
1 medium onion , thinly sliced
3 garlic cloves , minced
1 1/2 tablespoons curry powder ( see Tips , below )
1 pinch ground cumin
1 cup vegetable oil
hot pepper sauce ( see Tips , below )
green mango chutney ( kumchera see Tips , below )
thinly shredded cucumber

Instructions

1.In a bowl, mix together the warm water, sugar, and active dry yeast. Let the mixture sit for 5-10 minutes until it becomes frothy.
2.In a separate bowl, mix together the all-purpose flour, salt, turmeric, cumin, and black pepper.
3.Gradually add the yeast mixture to the flour mixture, kneading the dough until it becomes smooth and elastic.
4.Cover the dough with a damp cloth and let it rest for at least 2 hours.
5.In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the thinly sliced onions and minced garlic and cook until they become translucent.
6.Add the curry powder and ground cumin and mix well.
7.Drain the soaked garbanzo beans and rinse them well. Add them to the skillet and mix well. Cook for 10-15 minutes until the beans are soft.
8.In a separate skillet, heat 1 cup of vegetable oil over medium heat.
9.Divide the dough into small balls and roll them out into thin circles.
10.Fry the dough circles in the hot oil until they become golden brown and puffy.
11.Serve the chickpea mixture sandwiched between the fried dough circles with hot pepper sauce, green mango chutney, and shredded cucumber.
