Ingredients

1/3 cup warm water
1/4 teaspoon sugar
1 teaspoon yeast
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/2 teaspoon ground black pepper
1 can chickpeas ( garbanzo beans )
1 tablespoon canola oil
1 onion , thinly sliced
3 garlic cloves , minced
4 1/2 teaspoons curry powder
1 pinch ground cumin
salt & freshly ground black pepper
canola oil ( for frying )
hot pepper sauce , for serving
finely shredded cucumber , for garnish
Trini Doubles are a popular fast food in Trinidad and Tobago, especially at breakfast or lunchtime. They consist of two deep-fried rounds of dough called bara stuffed with chickpea curry or channa. Most doubles vendors offer an array of sauces and toppings, such as tamarind, mango, cucumber, and hot pepper sauce. Trini Doubles are usually eaten with bare hands, and their taste is a mix of savory, spicy, and tangy. They are a staple of the Caribbean cuisine and an excellent example of its multicultural influences.

Instructions

1.In a small bowl, combine warm water and sugar. Add yeast and let it sit for 10 minutes.
2.In a large bowl, mix flour, salt, turmeric, cumin, and black pepper together. Pour yeast mixture on it and knead the dough for 5 minutes. Cover the bowl with a clean kitchen towel and put it in a warm place to rest for 30 minutes.
3.In a large skillet, heat canola oil over medium heat. Add the onion and let it caramelize for 5-7 minutes. Add garlic, curry powder, and a pinch of cumin. Cook for 30 seconds until fragrant.
4.Add chickpeas, salt, and black pepper to the skillet. Cook for 5 minutes until heated through.
5.On a floured surface, divide the dough into 8 pieces. Roll each piece into a thin circle and deep-fry them in hot canola oil until golden brown. Drain them on paper towels to remove excess oil.
6.To assemble, add chickpea mixture on one piece of fried dough and top with another. Garnish with hot pepper sauce and finely shredded cucumber.

CONS
