Ingredients

2 tablespoons olive oil
2 tablespoons butter
2 1/2 lbs beef , rump roast , cut into 1-inch cubes
2 cups Spanish onions , coarsely chopped
1 -2 tablespoon hot pepper paste ( may sub chopped , stemmed chili peppers , or hot sauce )
4 garlic cloves , smashed
1 bay leaf
2 cups red wine ( or 1 cup wine and 1 cup water or beef stock )
24 black olives
1/4 cup flour ( mixed with 1/4 cup water )
1 teaspoon salt , coarse sea salt
1/2 teaspoon black pepper , freshly ground
Trincado African Beef Stew is a traditional Portuguese dish with African influences. This hearty stew is composed of tender beef cubes, spicy hot pepper paste, chopped onions, garlic, and red wine. The beef is cooked low and slow until it's fall-apart tender, and the sauce is thickened with flour to create a savory and flavorful stew. Instructions

1.Heat the olive oil and butter in a large pot over medium-high heat.
2.Add the beef cubes and brown on all sides, about 8-10 minutes.
3.Add the garlic, hot pepper paste, bay leaf, and onions to the pot and cook for 5-7 minutes until the onions are translucent.
4.Pour in the red wine and scrape the bottom of the pot to release any browned bits.
5.Add enough water or beef stock to cover the meat, and bring the stew to a boil. Lower heat and let simmer for 1-2 hours until the beef is tender.
6.Add black olives, salt, and black pepper. Whisk flour with water and gradually stir into the stew to thicken.
7.Cook for an additional 5-10 minutes until the sauce has thickened.
