Tres Leches Cake is a traditional sponge cake that is popular in many Latin American countries and originally hails from Nicaragua. It gets its name from the three types of milk that are used to make it: evaporated milk, sweetened condensed milk, and heavy cream. At Cafe Central in El Paso, they have perfected the art of making Tres Leches Cake, and this recipe is a delicious tribute to their culinary expertise. The cake itself is airy and light, while the milk mixture gives it a rich and indulgent flavor that is perfect for special occasions. Serve it with fresh fruit or whipped cream for an extra special touch.

Instructions

1.Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
2.In a large bowl, cream together the eggs, sugar, and butter until light and fluffy.
3.Stir in the flour and baking powder, then add the milk and vanilla extract. Mix well.
4.In a separate bowl, beat the egg whites with the cream of tartar until stiff peaks form. Gently fold the egg whites into the cake batter.
5.Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
6.In a separate bowl, combine the evaporated milk, sweetened condensed milk, and heavy cream.
7.Using a fork, pierce the surface of the cake all over. Pour the milk mixture over the cake, allowing it to soak in for at least an hour in the refrigerator before serving.
