Ingredients

1/2 cup olive oil
1 bunch chopped scallion , white and green parts
2 boxes frozen chopped spinach , defrosted
2 tablespoons chopped fresh dill
3 extra-large eggs , lightly beaten
7 ounces feta cheese , crumbled
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 box frozen phyllo dough , defrosted overnight in the refrigerator
1/2 lb unsalted butter , melted
1/2 cup plain breadcrumbs
Spanakopita is a traditional Greek dish that is commonly served as a snack or appetizer. It is made with layers of crispy phyllo dough and a savory filling of spinach and feta cheese. Instructions

1.Preheat the oven to 375°F (190°C).
2.In a large skillet, heat the olive oil over medium heat. Add the scallions and cook until softened, about 5 minutes.
3.Add the spinach and dill to the skillet and cook for 5 more minutes, until the spinach is wilted.
4.Remove the skillet from heat and let the spinach mixture cool for 5 minutes.
5.Add the beaten eggs, feta cheese, salt, and pepper to the spinach mixture and stir until everything is well-combined.
6.Grease a 9 x 13 inch baking dish with butter and sprinkle with breadcrumbs.
7.Lay one sheet of phyllo dough in the prepared dish and brush it with melted butter. Using a pastry brush, repeat this step with 6 more phyllo sheets, making sure to brush each with melted butter.
8.Pour the spinach and cheese mixture over the phyllo layers in the baking dish.
9.Layer the remaining 7 phyllo sheets over the top of the spinach mixture, brushing each sheet with melted butter.
10.Brush the top layer with melted butter and cut the spanakopita into squares or triangles with a sharp knife.
11.Bake the spanakopita for 45-50 minutes, until golden brown and crispy.
