1 large onion , thinly sliced
1/2 lb mushroom , washed and sliced
1 tablespoon all-purpose flour
1 cup beef broth
1 teaspoon Dijon mustard
3/4 cup sour cream
egg noodles , cooked for six

Instructions

1.Heat 2 tablespoons of butter or margarine in a large skillet over medium-high heat.
2.Add the beef and cook until browned, about 5 minutes.
3.Remove the beef with a slotted spoon and set aside.
4.Add the remaining tablespoon of butter or margarine to the skillet.
5.Add the onions and mushrooms and cook until tender, about 5 minutes.
6.Sprinkle the flour over the onions and mushrooms and stir for 2 minutes.
7.Whisk in the beef broth and Dijon mustard and bring to a simmer.
8.Add the beef back to the skillet and simmer for 5 minutes.
9.Remove the skillet from heat and stir in the sour cream.
10.Serve over cooked egg noodles.
