Ingredients

5 cups sifted flour
1 1/4 cups butter or 1 1/4 cups margarine
1/2 cup water
1 egg , beaten
1/2 teaspoon baking soda
1/2 cup sugar
1/8 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups ground almonds
1 1/2 cups ground walnuts
1/4 cup raisins ( optional )
1 tablespoon orange juice
1/2 cup sugar
2 -4 tablespoons honey
1 teaspoon cinnamon
1/2 teaspoon clove
1 pinch salt
1 teaspoon vinegar ( to taste , if you find the filling too sweet ) ( optional )
1 dash red wine
1 1/2 cups water
1 cup sugar
2 tablespoons honey
1 -2 tablespoon lemon juice
1 tablespoon rose water ( optional ) or 2 -3 drops rose extract ( optional )
Travados is a traditional Greek pastry that can be found in many bakeries and cafes around Greece. It's made with a sweet pastry dough and filled with a nutty mixture of ground almonds, ground walnuts, raisins, cinnamon, and cloves. The filling is cooked with honey and red wine to add depth of flavor and sweetness. These pastries are perfect for sharing with family and friends over a cup of coffee or tea.

Instructions

1.Preheat the oven to 350°F (180°C).
2.In a large mixing bowl, combine the flour and baking soda.
3.In a separate bowl, cream the butter/margarine and sugar together until light and fluffy. Add the egg and vanilla, and blend well.
4.Gradually add the flour mixture and mix until well combined. Stir in the ground almonds, ground walnuts, raisins (if using), orange juice, and honey.
5.To make the filling, combine the sugar, honey, cinnamon, clove, salt, vinegar (if using), red wine, water, and lemon juice in a saucepan. Bring to a boil, then reduce heat and simmer for 20-25 minutes until thickened.
6.Divide the pastry dough into four pieces. Roll each piece into a thin, rectangular shape. Spread the filling evenly over each piece, leaving a small border around the edges. Roll up tightly, and transfer to a baking sheet.
7.Bake for 30-40 minutes until golden brown and crispy.
