Norwegian Vafler are sweet waffles that are typically served as a snack or dessert, often accompanied by jam, sour cream, or berries. This recipe incorporates cardamom into the batter to give the waffles a unique flavor. Cardamom is a spice that is commonly used in Scandinavian and Middle Eastern cooking and adds a warm, slightly sweet taste to the waffles. Traditionally, these waffles were cooked over an open flame, but now they are typically made using a waffle iron. They are a popular breakfast and brunch item in Norway but can be enjoyed any time of the day.

Instructions

1.Separate egg yolks and whites into two bowls.
2.Beat egg yolks and sugar together until pale and fluffy. Then gradually add flour and cardamom, followed by yogurt and melted butter.
3.Whisk egg whites together using an electric mixer or whisk until they form soft peaks, and then fold them into the batter.
4.Heat a waffle iron until hot and brush with melted butter. Pour ½ cup of batter onto the waffle iron and cook until golden brown for about 3-5 minutes. Repeat with remaining batter.

PROS

These Norwegian cardamom waffles are crispy on the outside and fluffy on the inside, making them the perfect breakfast treat.

The recipe is easy to follow, and the waffles only take minutes to cook.

CONS

This recipe is relatively high in sugar and fat, making it better as an occasional breakfast treat.

The use of a waffle iron may also be a barrier for some home cooks who do not own one.

HEALTH & BENEFITS

While not a particularly healthy breakfast option, cardamom has been associated with improving digestive health and reducing inflammation in the body. Eggs and yogurt are also good sources of protein.
