Ingredients

2 tablespoons all-purpose flour
1 1/2 cups unsalted butter , at room temperature
4 cups all-purpose flour , divided
1/2 teaspoon salt
3 tablespoons sugar
2 ( .25 ounce ) packages active dry yeast
1/4 cup lukewarm water
1 cup milk
1/2 cup heavy cream
1 egg
1 tablespoon water

Instructions

1.In a small bowl, mix 2 tablespoons of all-purpose flour with 1 1/2 cups of unsalted butter.
2.In a large mixing bowl, combine 3 1/2 cups of all-purpose flour, 3 tablespoons of sugar, and 1/2 teaspoon of salt.
3.In another small bowl, dissolve 2 packages of active dry yeast in 1/4 cup of lukewarm water.
4.In a medium saucepan, heat 1 cup of milk and 1/2 cup of heavy cream until warm, then add the yeast mixture and stir well.
5.Add the wet ingredients to the dry ingredients and mix until a dough forms.
6.Knead the dough on a floured surface until smooth.
7.Roll out the dough into a rectangle and spread the butter flour mixture over the top.
8.Fold the dough in thirds to create three layers.
9.Repeat step 7 and 8 twice more.
10.Roll out the dough and cut into triangles.
11.Starting at the wide end, roll each triangle into a croissant shape.
12.Place the croissants on a baking sheet and let rise for 30 minutes.
13.In a small bowl, beat 1 egg with 1 tablespoon of water and brush over the tops of the croissants.
14.Bake in a preheated oven at 375°F for 15-20 minutes or until golden brown.
