Ingredients

2 1/2 lbs lamb chops , cut into 2 . 5cm thick pieces ( bone in )
2 -3 tablespoons plain flour
4 -5 tablespoons olive oil
2 medium onions , roughly chopped
3 carrots , peeled and cut in chunks
4 large potatoes , peeled and cut into chunks
2 tablespoons pearl barley
2 bay leaves
1 teaspoon dried thyme or 1 tablespoon fresh thyme , chopped
2 pints good beef stock or 2 pints lamb stock
3 tablespoons fresh parsley , chopped

Instructions

1.Preheat oven to 160°C.
2.Dust the lamb pieces with the flour and season.
3.Heat the oil in a large casserole dish and brown the meat in batches until golden brown. Remove and set aside.
4.In the same casserole dish, cook the onions and carrots until they start to soften.
5.Add in potatoes and barley, and give it a stir.
6.Place the lamb back in the casserole dish.
7.Add the stock, bay leaves and thyme.
8.Cover and cook in the oven for 2 hours.
9.Before serving, sprinkle with chopped parsley. Serve hot.
