Ingredients

2 large eggplants
2 large tomatoes
1 large onion
6 garlic cloves
1/3 kg ground beef
2 medium potatoes
3 tablespoons tomato paste

Traditional Iraqi 'casserole'- Tepsi Baytinijan is a popular and traditional dish in Iraq, particularly in the northern regions. Families will usually prepare large portions of the dish to share together. Similar to a lasagna, the dish features layers of eggplant, potatoes, and ground beef in a rich tomato sauce. The eggplant is first salted to draw out any excess moisture, then fried until golden brown to give the dish a crispy texture and smoky flavor. The beef is seasoned with garlic, onion, and spices, making it savory and satisfying. The dish is a beloved comfort food and can be easily adapted with different spices or additional vegetables.

Instructions

1.Slice the eggplants into 1/4 inch thick rounds.
2.Salt the eggplants and leave them for 1 hour to draw out excess moisture.
3.Rinse the eggplants thoroughly and pat them dry.
4.In a large pan, heat up corn oil and fry the eggplants until both sides are lightly golden. Remove and leave to cool.
5.In the same pan, add more corn oil and sauté diced onion until translucent. Add minced garlic.
6.Add tomato paste and diced tomatoes. Season with salt and pepper.
7.Add the ground beef and cook until browned.
8.Layer the fried eggplants on the bottom of a large oven-proof dish. Arrange sliced potatoes on the eggplant layer.
9.Pour the meat sauce over the potatoes.
10.Cover the dish with aluminum foil and bake in the oven for 40 minutes at 180°C.
11.After 40 minutes, remove the foil and bake for another 10 minutes until the top layer is slightly browned.
