Ingredients

1 lb feta cheese
12 ounces ricotta cheese
5 eggs ( lightly beaten )
1/2 teaspoon fresh parsley ( finely chopped )
melted butter ( for brushing , olive oil can also be used )
1 package phyllo dough ( room temperature )

Instructions

1.Preheat the oven to 375°F (190°C).
2.In a large bowl, crumble the feta cheese and add the ricotta cheese, lightly beaten eggs, and finely chopped fresh parsley. Mix well.
3.Unroll the phyllo dough and place it on a clean surface. Cover the dough with a damp cloth to prevent it from drying out.
4.Take one sheet of phyllo dough and brush it generously with melted butter. Repeat with another sheet of phyllo dough and place it on top of the first sheet. Continue until you have used half of the phyllo dough.
5.Spoon the cheese mixture along the longer edge of the phyllo dough, leaving a little space at the ends. Roll up the phyllo dough, folding in the ends as you go, to create a long, thin roll.
6.Continue this process until all the cheese mixture is used up.
7.Brush the outside of the rolls with melted butter and place them on a baking sheet.
8.Bake for 25-30 minutes or until the phyllo is golden brown and crispy. Serve hot.
