Ingredients

500 ml double cream
100 g caster sugar
7 egg yolks
1 whole vanilla pod , plump and juicy

Instructions

1.Split the vanilla pod lengthways and scrape out the seeds with a small knife.
2.In a saucepan, bring the cream, vanilla pod and seeds to the boil.
3.Beat together the egg yolks and sugar in a bowl until pale and creamy.
4.Gradually pour the hot cream into the egg mixture, whisking continuously.
5.Strain the custard back into the saucepan through a sieve and cook over low heat, stirring continuously until thick enough to coat the back of a spoon.
6.Do not overheat or the mixture will curdle.
7.Remove the vanilla pod.
8.Serve warm or cold.
