Ingredients

2 cups dried black beans ( substitute with red beans or pinto beans )
6 eggs
2/3 cup lard or 2/3 cup vegetable oil
8 cups water
1 1/2 cups yellow onions , diced
1 cup red bell pepper , chopped
1 teaspoon oregano
1/4 cup cilantro , chopped
1 celery rib , chopped
3 garlic cloves , crushed
2 tablespoons fresh cilantro leaves , diced
salt and pepper

Instructions

1.Soak the beans overnight.

4.Heat the lard or oil in a frying pan over medium heat. Add onions, red bell pepper, garlic, celery, and oregano and saute until the vegetables are tender.
5.Combine the sauteed vegetables with the cooked beans and bring to a boil.
6.Reduce the heat and let it simmer for 15 minutes.
7.Break the eggs into the soup one at a time, stirring as you add them. Let it cook for an additional 3 minutes.
8.Stir in the cilantro and salt and pepper to taste. Serve hot.
