Ingredients

2 large sweet potatoes
2 inches fresh gingerroot , skinned and sliced ( approx . 45g )
3 1/2 cups water
8 dried red dates ( optional )
1 slab raw brown sugar ( approx . 60g , if not available , can be substituted with rock sugar )

Instructions

1.Peel and cut the sweet potatoes into cubes.
2.Place sweet potatoes, ginger slices, and water into a pot and bring to a boil over high heat.

4.Add dried red dates and raw brown sugar (or rock sugar) and continue to stir.
