1 cup buttermilk
1 1/2 cups sugar , divided
3 eggs , seperated
1 cup sifted flour

Instructions

1.Preheat the oven to 350°F (175°C).
2.In a mixing bowl, cream the butter and one cup of sugar until light and fluffy.
3.Add egg yolks, one at a time, beating well after each addition.
4.Sift the flour, baking powder, and salt together and gradually add to the creamed mixture alternately with buttermilk, beating well after each addition.
5.Beat the egg whites until stiff peaks form. Gradually beat in the remaining half cup of sugar, blending until the sugar is dissolved to form meringue.
6.Fold the meringue into the cake batter with a spatula.
7.Pour the batter into a greased 9-inch (23cm) cake pan. Optional: Mix unsweetened chocolate with 1 tablespoon of the cake batter and swirl into batter, if desired.
8.Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
9.Optional Frosting Recipe: In a mixing bowl, beat 1/4 cup softened butter, 1/4 cup milk, and 2 cups confectioners' sugar. Spread over cooled cake and sprinkle with shredded chocolate.
