Ingredients

50 g rice flour ( coarse , available packed as 'Ground Rice ' in the UK )
600 ml 1 % low-fat milk ( my mum would have used whole milk )
25 g caster sugar ( To Taste )
Ground Rice Pudding is a traditional British recipe that has been enjoyed for generations. It's a simple but satisfying dessert that is creamy, satisfying and comforting. The dish typically uses whole grain rice, gently simmered in milk until the grains are cooked and the milk has thickened. However, this version uses rice flour instead of whole grain rice, and is cooked in a microwave instead of on the hob. This modern twist is perfect for busy cooks who still want to enjoy a classic dish.

Instructions

1.In a microwaveable dish stir together the rice flour, milk and sugar until fully combined.
2.Microwave on high for 5 minutes.
3.Stir again and microwave for another 3-5 minutes until the pudding has thickened.
4.Serve and enjoy!

PROS

This recipe is quick and easy to prepare.
The microwave method saves time and effort compared to cooking on the hob.

The finished dish is creamy, delicious and comforting, perfect for a winter evening dessert.

CONS

The texture of the pudding may come out slightly grainy due to using rice flour instead of whole grain rice.

It may be slightly difficult to get the consistency of the pudding just right during microwave cooking.

HEALTH & BENEFITS

This recipe is higher in sugar than some other desserts, but overall it is relatively healthy.
Rice flour is gluten-free and low on calories and fat compared to some other grains, making it a good choice for a lighter dessert. Milk is also high in protein and calcium, which is good for the bones.
