1 lemon , juice and zest of
1/4 pint brandy or 1/4 pint rum

Instructions

1.Preheat the oven to 140C/275F/gas mark 1.
2.Put all the ingredients except the brandy or rum into a large ovenproof bowl and mix well.
3.Cover tightly with foil and then put in the oven.
4.Cook for 3 hours, checking every now and then to make sure it is not drying out and if it is then add a splash of water.
5.Remove from the oven and leave to cool; stir in the brandy or rum.
6.Fine traditional mincemeat is left to mature for about 3 weeks before using.
