1 lb beef chuck , cut in large cubes

water
3 tablespoons sugar
3 tablespoons sake or 3 tablespoons sherry wine
3 tablespoons soy sauce
1 tablespoon mirin
1 teaspoon dark sesame oil
2 lbs red potatoes , peeled and cut in chunks
1 cup white pearl onion
1 cup frozen peas
4 -5 cups cooked white rice

Instructions

1.Heat the vegetable oil in a large pot and add the beef cubes. Sear for 2-3 minutes on each side until browned.
2.Add the sliced onions, diced ginger, and minced garlic to the pot. Sauté for 2-3 minutes until the onions are translucent.
3.Add just enough water to cover the beef and vegetables, then add the sugar, sake or sherry wine, soy sauce, and mirin, as well as the dark sesame oil.
4.Bring the mixture to a boil and then reduce the heat to low. Let the stew simmer for 30 minutes.
5.Add the red potatoes, white pearl onions, and frozen peas to the stew and continue simmering for an additional 20-30 minutes, or until the potatoes are tender.
6.Serve the Nikujaga hot over cooked white rice.
