Ingredients

2 lbs fresh string beans
2 large onions
1/4 cup chopped fresh dill
1/2 cup olive oil
4 garlic cloves
1 cup chopped fresh parsley
1 can Italian tomatoes , chopped

4 -6 medium zucchini
2 packages frozen okra , thawed ( optional )

Instructions

1.Preheat the oven to 375F.
2.Cut the tops and tips of the beans and wash them under cold water. Peel and thinly slice the onions.
3.In a large frying pan, heat the olive oil over medium-high heat and sauté the onions for about 5 minutes.
4.Add the string beans and garlic to the pan and sauté for another 5 minutes. Continue stirring until they are coated in the oil and onions.
5.Add the diced tomatoes, parsley, dill, salt, and pepper. Stir well.
6.Slice the zucchini into round pieces and add them, along with the thawed okra, to the pan. Mix everything together well and cook for another 5 minutes or until the zucchini and okra start to soften.
7.Transfer the mixture to a baking dish and cover it tightly with foil.
8.Bake in the oven for 45 minutes. After 45 minutes, remove the foil and bake for another 15 minutes or until the vegetables are tender and the liquid is mostly evaporated.
