Ingredients

600 ml water
1 piece konbu
1 cup bonito flakes
3 tablespoons dark soy sauce
1 tablespoon mirin
2 teaspoons sugar
160 g dry soba noodles
1/3 cake kamaboko ( fish cake )
1 green onion
1 lemon , rind only
shichimi togarashi ( blend of seven spices )
Toshikoshi Soba is a Japanese soba noodle dish often eaten on New Year's Eve. It is a way to bid farewell to the old year and welcome the new year with a hearty and symbolic meal. The dish is made by boiling soba noodles and serving them in a warm broth made from bonito flakes, soy sauce, mirin, and sugar. It is then topped with different ingredients like kamaboko (fish cake), chopped green onion, lemon rind, and shichimi togarashi, a blend of seven spices. Instructions

1.In a large pot, bring the water and konbu to a boil over high heat.
2.Remove the konbu and add the bonito flakes, cooking for 2 minutes.
3.Remove from heat and strain the broth through a cheesecloth, squeezing out as much liquid as possible.
4.In a separate pot, combine the broth, soy sauce, mirin, and sugar and bring to a simmer over medium heat. Cook for 3 minutes, stirring occasionally.
5.Cook soba noodles according to the instructions on the package until al dente, then drain and rinse with cold water.
6.Divide the soba noodles among 4 bowls and pour the broth over the noodles.
7.Top each bowl with slices of kamaboko, chopped green onion, lemon rind, and a sprinkle of shichimi togarashi.
