1 lb yukon gold potato , peeled and cut into chunks
1 1/4 cups milk
1/3 cup grated parmigiano-reggiano cheese ( Parmesan )
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon grated nutmeg
3 tablespoons finely minced fresh parsley leaves
2 eggs

Instructions
