1 cup masa harina ( corn tortilla flour , 4 1/2 oz )
3/4 cup warm water
1 large garlic clove , minced
1 teaspoon serrano chile with seeds , minced ( or to taste )
1 cup white onion , minced ( divided )
4 tablespoons lard or 4 tablespoons vegetable oil , divided
2 cups Huitlacoche or cans Huitlacoche , coarsely chopped
1 cup queso fresco or 1 cup ricotta salata , crumbled
salsa verde , cruda about 1/2 cup ( store bought , Tomatillo Salsa Fresca or your own recipe )

Instructions

1.In a large mixing bowl, whisk together the masa harina, warm water, minced garlic, serrano chile, and half of the minced onion until the mixture comes together to form a smooth dough.

3.Use a tortilla press to flatten each ball into a thin, round tortilla.
4.Heat 2 tablespoons of lard or vegetable oil in a large skillet over medium heat.
5.Add the remaining minced onion to the skillet and sauté for 2-3 minutes until translucent.
6.Add the coarsely chopped Huitlacoche to the skillet and cook for 5-7 minutes, until heated through.
7.Remove the Huitlacoche from the skillet and set aside.
8.In the same skillet, heat the remaining 2 tablespoons of lard or vegetable oil over medium-high heat.
9.Add the tortillas to the skillet in batches and cook for 1-2 minutes per side until lightly browned and crisp.
10.To assemble the chalupas, top each tortilla with a spoonful of the Huitlacoche mixture, crumbled queso fresco or ricotta salata, and a drizzle of salsa verde. Serve immediately.
