12 corn tortillas
oil ( for frying )
3 cups mexican cheese
1 1/4 cups creme fraiche
2 cups canned tomatillos , drained
4 tablespoons water
2 serano chilies , seeded and chopped
2 garlic cloves
1 bunch cilantro
1/2 cup sour cream

Instructions

1.Cook the ground pork in a non-stick skillet over medium-high heat until browned and crispy, about 5-7 minutes.
2.Add the garlic, oregano, cinnamon, cloves, black pepper, sherry, caster sugar, and salt. Cook for another 2-3 minutes, stirring occasionally, until the pork is evenly coated in spices.
3.Heat some oil in a separate skillet over medium-high heat. Place one tortilla in the hot oil and cook for about 10-15 seconds on each side.
4.Repeat this process with the remaining tortillas.
5.Preheat the oven to 375°F. Combine the cheese and creme fraiche in a bowl.
6.In a blender or food processor, puree the tomatillos, water, chilies, garlic, and cilantro.
7.Spread a thin layer of the tomatillo sauce onto the bottom of a 9-inch pie dish.
8.Layer 4 of the fried tortillas on top of the sauce, then spread 1/3 of the cheese mixture over the tortillas.
9.Spoon 1/3 of the pork mixture on top of the cheese.
10.Repeat steps 8-9 twice more, until all the ingredients are used up.
11.Bake the pie in the oven for 25-30 minutes until hot and bubbly. Serve with a dollop of sour cream on top.
