1 1/2 green bell peppers , chopped or 1 1/2 red bell peppers
1/2 cup green chili , diced
1 package taco seasoning mix ( 1.25 )
2 cups taco sauce , divided
1 package soft taco-size flour tortillas , divided ( -10 )
2 cups Mexican blend cheese , shredded , divided

Instructions

1.Preheat your oven to 350°F.
2.Heat vegetable oil in a large skillet over medium-high heat until hot.
3.Add chicken or ground beef to the skillet and cook until browned.
4.Stir in onion, green or red bell peppers, green chili, taco seasoning mix, and 1 cup taco sauce.
5.Spread some of the taco sauce on the bottom of an 11 x 7 inch baking dish.
6.Layer 5 of the tortillas on top of the sauce, overlapping slightly.
7.Spread 1/3 of the meat mixture over the tortillas, and sprinkle 1/3 of the cheese over that.
8.Repeat the layering process to create 3 layers.
9.Cover the top with a final layer of tortillas, and cover those tortillas with additional taco sauce and cheese.
10.Bake in the oven for 20-25 minutes, or until the cheese is melted and bubbly.
