2 pounds baking potatoes , peeled and cut into 1/4-inch slices
salt and pepper to taste

Instructions

1.In a large frying pan, heat the 1/2 cup of olive oil over medium heat. Add the sliced potatoes, salt, and pepper. Cook for 10 minutes or until the potatoes are soft.
2.Remove the potatoes from the pan with a slotted spoon and place them into a large bowl.
3.In the same frying pan, heat the remaining 2 tablespoons of olive oil on medium heat. Add the sliced onions and cook until the onions are soft and translucent.
4.Add the cooked onions to the bowl with the potatoes, then add in the eggs, roasted red pepper, and chopped serrano ham. Mix everything together well.
5.Heat the same frying pan over medium heat and pour the potato and egg mixture back into the pan. Cook for 10-15 minutes or until the tortilla is firm and golden brown.
6.To flip the tortilla, place a large plate over the frying pan and carefully flip the tortilla onto the plate. Slide the flipped tortilla back into the frying pan and cook for another 5-10 minutes until cooked through and golden brown.
