Ingredients

1 lb frozen cheese tortellini
1 can whole tomatoes , crushed by hand or wooden spoon
1/3 cup sun-dried tomato packed in oil , drained a bit , and chopped
2 garlic cloves , crushed and chopped
5 ounces fresh Baby Spinach
1/2 teaspoon crushed red pepper flakes , to taste
2 tablespoons fresh basil , roughly chopped
salt and pepper
fresh grated pecorino romano cheese , for serving

Instructions

1.Cook cheese tortellini according to package instructions. Reserve at least 1 cup of pasta water before draining.
2.Meanwhile, heat oil from the sun-dried tomatoes in a large skillet over medium heat. Add crushed and chopped garlic, stir occasionally and cook for 1 minute.
3.Add crushed whole tomatoes, chopped sun-dried tomatoes and cook until the mixture starts to simmer. Reduce heat to low and simmer for 10-15 minutes. Stir in fresh basil.
4.Add baby spinach to the skillet and toss it with the sauce until wilted, about 1-2 minutes.
5.If the sauce is too thick, add reserved pasta water 1/4 cup at a time until desired consistency is achieved. Add salt and pepper to taste.
6.Serve hot with fresh grated pecorino romano cheese on top.
