Ingredients

2 packages refrigerated cheese-filled tortellini
1 bottle peppercorn ranch dressing , divided
1 -2 tablespoon onion powder
1 -2 tablespoon garlic powder
1/2 tablespoon crushed red pepper flakes
2 large eggs
2 cups fine dry breadcrumbs
3/4 - 1 cup mild chunky salsa
3/4 - 1 cup chpd fresh cilantro
2 cups vegetable oil , for frying
fresh cilantro stem

Instructions

1.Boil the tortellini according to the package instructions until al dente and drain well.
2.In a large mixing bowl, combine 1/2 cup of the ranch dressing with the onion powder, garlic powder and crushed red pepper flakes. Stir that mixture well.
3.Add the tortellinis to the ranch mixture and toss until they are well coated.
4.In another mixing bowl, lightly beat the eggs.
5.Spread the breadcrumbs onto a large plate. Dip each coated tortellini into the beaten eggs and then coat it with breadcrumbs.
6.In a large skillet, heat enough vegetable oil over medium heat until the temperature reaches 350°F. Fry the tortellini in batches until they are golden brown and crispy. This process should take approximately 3 minutes per batch.
7.In a small mixing bowl, combine the remaining 1/2 cup of ranch dressing with the mild salsa and chopped cilantro to create the dip.
8.Serve the tortellini tapas hot with the spicy ranch dip and garnish with fresh cilantro stem.
