Ingredients

1 pound rainbow tortellini pasta , uncooked
3 roma ( plum ) tomatoes
1 tablespoon tomato paste
1 clove garlic , minced
3 tablespoons red wine vinegar
3 tablespoons balsamic vinegar
2 teaspoons Dijon-style prepared mustard
1 teaspoon honey
1/3 cup olive oil
1/3 cup vegetable oil
salt and pepper to taste
3/4 cup shredded provolone cheese
3 ounces hard salami , diced
2/3 cup sliced celery
1/4 cup sliced black olives
1/2 cup red bell pepper , diced
1 tablespoon red onion , diced
1/4 cup chopped fresh parsley
1 teaspoon chopped fresh rosemary
1 tablespoon fresh lemon juice
salt and pepper to taste
Tortellini Salad with Grilled Tomato Vinaigrette is a great summer salad recipe that is both filling and fresh. Instructions

1.Preheat grill for high heat.
2.Bring a large pot of lightly salted water to a boil. Add tortellini pasta and cook for 8 to 10 minutes or until al dente; drain and rinse under cold water.
3.Place tomatoes on the grill. Grill for 2 minutes on each side, or until the skin is blistered and charred. Remove and cool for a few minutes.
4.In a blender or food processor, combine tomato paste, garlic, red wine vinegar, balsamic vinegar, mustard, honey, olive oil and vegetable oil. Blend until smooth. Season with salt and pepper.
5.In a large bowl, combine the tortellini, tomato vinaigrette, provolone cheese, salami, celery, black olives, red bell pepper, red onion, parsley, rosemary and lemon juice. Toss to coat.
6.Season with salt and pepper to taste.
