Ingredients

1 lb sweet sausage , loose , not in casing
1 large onion , diced small
2 tablespoons chopped garlic
1/2 lb mushroom , sliced
1 quart heavy cream
4 ounces tomato sauce
1 cup grated asiago cheese
1 bag spinach
6 quarts water
2 lbs tortellini

Instructions

1.Fill a large pot with 6 quarts of water and bring it to a boil.
2.When the water starts boiling, add in the tortellini and cook according to the package instructions. Once the tortellini is cooked, drain the water and set the tortellini aside.
3.In a large frying pan, heat 2 tablespoons of olive oil over medium heat.
4.Add the sweet sausage into the pan and cook for about 8 minutes, breaking the sausage up into small pieces with a wooden spoon.
5.Add the onions and garlic and continue to cook while stirring for approximately 5 minutes until the onions are translucent.
6.Add sliced mushrooms to the pan and cook for another 5 minutes.
7.Pour the heavy cream, tomato sauce and grated asiago cheese into the pan.
8.Simmer for 2-3 minutes, then add in the spinach and stir until the spinach has wilted.
9.Add the cooked tortellini and stir until well mixed and heated through.
10.Sprinkle additional grated Asiago cheese over the top before serving.
