Ingredients

1 lb cheese tortellini
1 jar roasted red peppers , sliced into strips
1 package frozen baby peas , defrosted
2 cups alfredo sauce ( I use Nutcracker Sweet Pie ( recipe below ) )
5 tablespoons unsalted butter
2 cups heavy cream
2 cups vegetable stock
3 tablespoons minced garlic
1 tablespoon cornstarch , mixed with
2 tablespoons water
3/4 cup freshly grated parmesan cheese
1 tablespoon minced fresh parsley
salt & freshly ground black pepper , to taste
This Tortellini Alfredo recipe is a classic Italian dish that is loved by people all over the world. Instructions

1.Preheat your oven to 400°F.
2.Cook the tortellini according to package instructions until it's al dente, then drain and set it aside.

4.In a separate skillet, melt the butter over medium-high heat.
5.Add the defrosted baby peas to the skillet and saute for a couple of minutes.
6.Reduce the heat to low and add the alfredo sauce, cream, vegetable stock, and minced garlic to the skillet, stirring until it's heated through.
7.Add the tortellini to the skillet and mix everything together well.
8.In a small bowl, mix the cornstarch and water and add it to the skillet, stirring until the sauce thickens.
9.Add the roasted red pepper slivers, grated parmesan cheese, parsley, salt, and pepper, then serve and enjoy!
