Instructions

1.Preheat oven to 350°F (180°C). Grease and line a 9 inch springform cake tin.

3.Add potato flour, ground almonds, orange zest and juice to the egg yolk mixture. Mix well.
4.Beat the egg whites until stiff peaks form.
5.Fold in the egg whites to the cake mixture.
6.Pour the mixture into the cake tin and smooth out the surface.
7.Bake for about 40-45 minutes until the cake is golden and a skewer inserted comes out clean. Remove from the oven and leave it to cool completely.
8.Dust icing sugar on top of the cake and serve.
