Ingredients

1 1/2 cups sherry wine ( a drinkable not too dry sherry ( NOT cooking sherry )
8 ounces raisins
2 cups sugar
3 cups water
2 cinnamon sticks
7 ounces shredded unsweetened coconut ( dessicated is fine )
1 poundcake ( the recipe I use provides a 10-inch cake )
10 eggs , separated
2 teaspoons ground cinnamon
butter , for the pan

Instructions

1.Preheat the oven to 350°F (180°C). Grease a 10-inch cake pan with butter.
2.In a saucepan, combine sherry wine, raisins, sugar, water, and cinnamon sticks. Bring to a boil over high heat and then reduce the heat to low. Simmer for 10-15 minutes or until the raisins are plump and the liquid is syrupy. Remove from heat and discard cinnamon sticks.
3.Add shredded coconut to the syrupy mixture and stir to combine.
4.In a separate bowl, beat egg whites using an electric mixer until stiff peaks form. Separately, beat egg yolks and ground cinnamon until doubled in volume.
5.Gently fold the egg yolk mixture into the egg whites.
6.Add the coconut mixture to the egg mix and fold until combined.
7.Pour the batter into the prepared cake pan and bake in the preheated oven for 45-50 minutes or until a toothpick comes out clean when inserted into the center of the cake.
8.Let the cake cool inside the pan for 10 minutes. Then invert the pan onto a serving platter. Enjoy!
