Ingredients

1/3 cup olive oil
1 onion , medium chopped
4 garlic cloves , minced
1 tablespoon basil ( fresh & chopped ... or 1 teaspoon dried )
2 tablespoons parsley , chopped
1 1/2 teaspoons oregano ( fresh & chopped ... or 1/2 teaspoon dried )
2 cans of italian peeled tomatoes ( it is important that these be Italian grown tomatoes ... look where they come from )
1 can italian tomato paste ( again important that these be imported from Italy )
1 1/2 teaspoons sugar
1 teaspoon salt
1 pinch ground pepper
1/2 teaspoon thyme
2 bay leaves
6 Italian sausage ( browned and cut in quarters )

Instructions

1.Heat olive oil in a large pot over medium heat, then add onions and garlic, and cook until tender and translucent, stirring occasionally for about 5 minutes.
2.Add in the basil, parsley, and oregano, and cook for an additional minute.
3.Crush the tomatoes with your hands and add to the pot, along with the tomato paste, sugar, salt, pepper, thyme, and bay leaves, then stir to combine.
4.Bring the sauce to a boil then reduce the heat to a simmer. Cover and let it cook for about 1 hour, stirring occasionally.
5.Meanwhile, brown the Italian sausage in a pan over medium heat, then cut into quarters, and add to the sauce after it has cooked for an hour. Let it cook for an additional 30 minutes before serving.
