Instructions

1.Grease two sheets of wafer paper with vegetable oil, then line a 9x13-inch baking pan with one sheet of the greased wafer paper, oil side up.
2.In a large, heavy bottomed pot, combine honey and 1 cup of sugar.
3.Cook over medium-high heat, stirring constantly, until the mixture reaches 260°F (126°C) on a candy thermometer, approximately 10 minutes.
4.In a clean, dry bowl, beat the egg whites until stiff peaks form. Slowly add in the remaining 3 tablespoons of sugar and a pinch of salt until the mixture becomes glossy and white.
5.With the honey mixture still on medium-high heat, slowly pour in the egg white mixture, stirring constantly.
6.Reduce heat to medium and stir the mixture frequently for about 8 minutes until it starts to pull away from the sides of the pot.
7.Remove from heat and stir in the vanilla extract, lemon zest, roasted almonds, and pistachios.
8.Quickly pour the mixture into the prepared baking pan and spread out evenly with a spatula. Cover the top with the remaining sheet of wafer paper.
9.Allow the Torrone to cool down and set for several hours or overnight before cutting into squares with a sharp knife.
